Rainbow drip birthday cake: gluten free

So my mum’s birthday was last Friday and me and my sister made the biggest cake we’ve ever made and in my opinion one of the best we’ve made too.

You will need

3 Batches of the sponge cake recipe split into 6 bowls
– Food colouring in 6 bright colours
– 2 tubs frosting
– Strawberry jam
– ½ cup heavy cream
– 1 ½ cup white chocolate
– White roll out icing
– Black food colouring

Method

1. Make 3 batches of the sponge cake recipe and split them between 6 bowls. Colour each bowl with a different colour, I used; red, purple, orange, pink, blue, and green. Bake the cakes at 180° for about 20 minutes.
2. Once baked allow time for the cakes to cool then level them off making sure the top is flat for stacking. Begin stacking the cakes putting some frosting and jam in between each layer until they’re all done.
3. Take the frosting and put a thin layer around the stacked cakes to act as the crumb coat. Then put it into the fridge for 20 minutes to allow it to set a little.
4. To make the elephant we dyed ¾ of the white roll out icing grey with the black food colouring then start sculpting the elephant. I can’t really talk through that part because I wouldn’t know where to start. This is definitely the most difficult part of the whole cake but my sister is magic and managed to pull it off to make our amazing little elephant.
5. Once the 20 minutes are up remove the cake and add a thicker layer of frosting all over the cake. Using the palette knife start at the bottom and move upwards spinning the turn table to add the pattern into the cake. Do the same with the top.
6. Make the rainbow drips by heating the cream until warm enough to melt the chocolate. Mix in the chocolate until melted fully. If it’s too thick add more cream and if too thin you can add more chocolate. Split the mix into 6 and add in the food colouring.
7. Using either a spoon or a squeeze bottle drip the chocolate colours onto the cake changing between the colours as you go round. If it starts setting before you’ve finished heat it in the microwave for 5 to 10 seconds.
8. Place the elephant in the centre of the cake and then you are done.

This was definitely one of my favourite cakes to make but at the same time it was one of the most difficult ones too. But the main thing is that my mum loved it and if she’s happy then I’m happy.
